Step 1: Evaluate the Coffee Program You Already Have

One of the first things we recommend when a business considers switching coffee roasters is to take a look at its existing setup.

Before purchasing new equipment or changing a menu, it's worth understanding what's already working.

What equipment are you currently using? Are your drinks consistent from one employee to another? Are your coffees a good fit for your customers? And where would improvements make the biggest difference?

With Edelweiss, we discussed their existing espresso equipment, coffee offerings, and what they wanted their beverage program to become.

That helped us approach the transition as a series of practical improvements instead of an unnecessary overhaul.

Step 2: Make the Right Equipment Improvements

A lot of people think better coffee means buying a whole new espresso setup right away. Sometimes it does. But usually there are smaller upgrades worth making first.

For Edelweiss, the first priority was their espresso grinder. A good grinder is the backbone of consistent espresso. It makes it easier for your team to dial in, keeps shots tasting the same from cup to cup, and speeds things up during a rush.

We helped them compare grinder options and find one that fit their operation. Later, when it was time to replace their espresso machine, we helped with that too, from choosing the right espresso machine to getting it set up.

We made each of those calls based on what Edelweiss actually needed, when they needed it. A new roaster shouldn’t be an excuse to replace everything on day one. A good wholesale partner helps you figure out where your money will make the biggest difference, and when.

Step 3: Find Coffees That Fit Your Menu and Customers

Choosing wholesale coffee is about more than finding something that tastes good in a tasting.

The coffees need to perform in the drinks your business serves every day.

A blend that works beautifully for straight espresso might also need to hold its own in a latte. A brewed coffee needs to appeal to customers who prefer a traditional cup. Decaf deserves the same consideration as everything else on the menu.

For Edelweiss, we worked together to select coffees for its espresso, brewed coffee, and decaf offerings.

Today, their orders include several Tapestry coffees, including our Abstract, Loom, and Fringe blends, alongside decaf.

Having options allows the coffee program to serve different tastes and preferences without making the menu unnecessarily complicated.

That's an approach we also use in our own coffee shops. We want specialty coffee to feel approachable, whether someone orders a black coffee or their favorite flavored latte.

Step 4: Make the Transition Manageable

Switching wholesale coffee suppliers shouldn't mean your team is left to figure everything out alone.

There are practical details to think through: getting equipment ready, choosing appropriate grind settings and recipes, introducing new coffees, and making sure orders arrive when they're needed.

With Edelweiss, our involvement extended beyond selecting coffee. We helped coordinate equipment sourcing and worked through the steps involved in preparing their program for the change.

In their first two months with us, Edelweiss ordered about 33 lbs of coffee a week. Today, it’s about 60 lbs a week. That’s an 82% increase.

Plenty goes into a bakery’s growth, and we won’t take credit for all of it. But we’re proud to be part of it. Edelweiss kept investing in their coffee program, and we’ve been right there with them, supplying coffee and helping out along the way.
