Natural Guji - Hambela Wamena Washing Station - Heirloom

The Hambela Wamena Washing Station was founded in 2018 by the founder of Tega & Tula farms. Its location at the top of the highest mountain peak of Guji Hambela makes it a central point to serve surrounding towns and it currently serves around 3,900 producers. There are a number of social programs supported by this washing station including the building of roads, schools, and technical equipment and support for producers as well as medical health expenses and support for women's health care.

Guji is a beautifully forested area in southern Ethiopia. Before the early 2000's, this region was considered part of Sidama, but has since become its own region. The people of Guji grow coffee gardens at very high altitudes in the rich red soil of the highlands, setting this coffee's profile apart from neighboring regions. These smallholders deliver their coffee to washing stations to be sorted and processed together, developing flavors of fruits, deep chocolate, and light florals.

What are the recommended brewing methods?

A phenomenal option for any manual brewing method whether it be a pour-over of any style, french press, or whatever else it might be! With the lighter taste tones and body, it will benefit from pour-over styles better than immersion options.

How should I brew this coffee?

To get the best out of this coffee we always recommend this recipe as a stating point

  • Brew with a 1:16 ratio (one gram of coffee to every 16 grams of water).
  • Use water that is between 198 - 204 degrees Fahrenheit
  • Adjust your grind for a 3-4 minute brew time. (The finer the grind, the longer it will take to brew)

How do I brew this coffee as espresso?

Ground Coffee In: 

17.0 - 18 grams

34 - 36 grams

What size bag should I order?

Great question! Ultimately, it just comes down to your coffee drinking rate, but we loosely recommend the following:

12 oz = Each bag brews approximately 2-3 cups per day for a week.
2 lb = Each bag brews approximately 2-3 cups per day for about 2-3 weeks.
5 lb = Each bag brews approximately 4-5 cups per day for about 3-4 weeks.

So delicious

This coffee is just so good. The strawberry, lemon, and cocoa notes on the bag are spot on. I was originally brewing too hot (205°F) and grinding a little too fine. Once I went a little coarser on the grind and brewed at 200°, the fruit flavors came out full force. I can only name two other coffees I've ever had that I like as much as this one!
