Scott Van Daalen

Co-Founder, Tapestry Coffee
Scott Van Daalen is a co-founder of Tapestry Coffee, a specialty coffee company with two coffee shops in Lakeville, Minnesota and a small-batch roastery in St. Paul. Scott has worked in coffee for six years. He opened Tapestry in 2021 with Brady Heerema and Kiley Van Daalen because they believed the south metro deserved coffee as good as anything in the Twin Cities.
Tapestry now roasts every coffee to order and supplies coffee shops, restaurants, offices and churches across Minnesota. In 2026, USA TODAY 10BEST readers voted Tapestry the #1 Best Independent Coffee Shop in the U.S.
As co-founder, Scott leads Tapestry's operations, wholesale program, finance, marketing, staff and culture, and oversees the company's growth. He works directly with cafés, restaurants and offices across Minnesota to build their coffee programs, and he's focused on keeping Tapestry a place where people feel welcome, both behind the bar and in front of it.
Before coffee, Scott worked in church ministry and leadership, and he holds a master's degree in theology from Fuller Seminary. That background still shapes how he leads, and it's a big part of why Tapestry's mission is creating connection through coffee.
