5 Reasons Your Home Espresso Still Doesn't Taste Like a Coffee Shop
Before you blame your machine, take a look at the coffee.
You got the espresso machine. You watched the videos. You've changed the grind, the dose and the timing, and your shots still taste sour, bitter or just kind of flat.
We hear this from customers at our cafés all the time. And a lot of the time, the machine isn't the problem.
Technique matters. But some of the biggest differences between café espresso and home espresso happen before you ever pull a shot. Here are five of them.
1Your coffee is older than you think
Coffee tastes its best in the weeks after it's roasted. After that, the aromas fade and the flavor goes flat.
A lot of coffee spends time in warehouses, on trucks and on store shelves before it ever gets to your kitchen. Some bags don't even show a roast date, just a "best by" date months away.
Look for a roast date on the bag, and try to use it within a month or so of roasting.

2It was ground too early
Once coffee is ground, it goes stale fast. Within a day or two, a lot of what makes it taste great is gone.
Espresso is even pickier. It needs a very fine, very even grind, and pre-ground coffee is almost never right for your machine.
If you can, buy whole bean and grind right before you brew. If we had to choose, we'd upgrade the grinder before the machine.

3It might be too fresh
Here's one most people don't know: coffee can be too fresh for espresso.
Right after roasting, beans release a lot of gas. That can make shots taste sharp, sour and uneven no matter what you change.
Give espresso beans about 5 days after roasting before you dial in. Drip and pour over are fine sooner.
4Some coffees are harder to dial in
Some coffees are bright and delicate. They're fun, but they can be tricky as espresso. Miss the grind a little and you get a sour shot.
Other coffees are built to be forgiving: sweet, balanced and easy to get right, with enough body to stand up to milk.
If you're still learning your machine, start with one of those. Save the tricky stuff for later.
5Coffee shops use coffee built for their bar
