DESCRIPTION OF COFFEE

Dried berries, milk chocolate, and green grape. This washed anaerobic offering from Daniel Mauricio Bolaños delivers a deeply sweet and chocolatey cup. Anaerobic fermentation is a newer way to process coffee. Daniel will perform a 72 hour exposure to a water-yeast mixture helps to increase the natural flavors found in the coffee and adds flavor depth & brightness. Try this very complex single origin offering as a pour over, filter, or even as an experimental espresso option!

Daniel Mauricio Bolaños owns and runs the farms El Pacer and La Esperanza both a part of the Asociacion los Naranjos in San Agustin. These farms sit at altitudes of 1700 masl and 1650 masl respectively. Both are 5-hectare farms with 2,000 to 11,000 coffee trees and other produce grown on-site. Fly crop runs June through August with the main harvest being November through January. 

For Daniel's fermentation process, the cherries are collected and taken to a tank with water to remove the impurities. Then the cherries are removed and added to an open plastic container for 48 hours, pulped, and added to the plastic container again for 72 hours with a little water. The coffee is then washed and moved to dry either on African raised beds or on Parabolic drying beds for around 20-25 days.

Located in southwestern Colombia, Huila is nestled in-between the Central and Eastern ranges of the Andes, with the middle area called the Magdalena Valley. The variation in elevation results in Huila being one of the country's most unique and complex regions of coffee production. Its terroir, climate, and harvest cycles all contribute to the quality of coffee produced here. The most impressive quality behind the coffees coming out of Huila lies in the people producing them. While Huila accounts for nearly 20% of the country's production, 80% of coffee producers operate on less than three hectares.

We focus on balanced flavor and consistency so you can make a great cup without overthinking it. As a starting point, we recommend a 16:1 brew ratio, meaning 16 parts water to 1 part coffee. From there, adjust to taste and enjoy it fresh.
