The Decision to Start Roasting Our Own Coffee

In the lead-up of taking over ownership and operations of the coffee shop in the Spring of 2020, we knew that having the highest quality coffee was going to be of the utmost importance to us. We wanted to not only have the highest quality roasted coffee that we could but also to partner with a coffee roaster that was sourcing coffee that was practicing models of sustainable coffee sourcing for everyone along the coffee supply chain. With all these factors in mind, we ultimately selected Onyx Coffee Lab as our coffee roaster at the coffee shop.

However, in the back of our minds, we always thought about eventually roasting our own coffee. Most people would have waited years after starting a coffee shop to move to roast coffee as well, but we love taking on crazy challenges so we started the process about 6 months into owning the shop. When we set out, we knew we would have to find a warehouse space to house the coffee roaster, research the best manufacturer of coffee roasters, and learn the ins and outs of the art of coffee roasting.

The decision to roast coffee came from a desire to make sure we had the highest quality coffee beans possible along with making sure that everyone along the coffee supply chain was treated well. We believe that the farmers who share our values of quality, environmental stewardship & dignified treatment of others, should be paid a premium price for their beans. Being a Minnesota coffee roaster is something we are very proud of!

We are so excited to announce we are officially roasting our own coffee! For the last 6+ months, we have been working behind the scenes to find our perfect warehouse, purchase a coffee roaster, and learn all about the ins + outs of roasting our own coffee. After lots of taste tests, readjustments, and determination we are so excited to be officially launching our beans behind the bar at our shop, on our retail shelf for at-home brewing, and available for wholesale.
